Breakfast

We always have a fairly substantial cooked breakfast.  Today we had Maca Pancakes, and tomorrow it will be a 2-egg mushroom and cheese omelette for the Rower, and 2 eggs and prosciutto for me.

Maca Pancakes: (Gluten free)
2 tbsp coconut flour
2 tbsp tapioca flour
1 tbsp Maca powder
A teeny pinch of salt
3 eggs - plus a drop of almond milk to slacken.

Whisk altogether and leave to thicken.  Add more milk if you want it more runny, but I usually aim for a thickish batter.  Sort of like drop scones.  Pan fry in your fat of choice - coconut oil or olive oil is what I use.  Serve with yoghurt of choice, berries and a sprinkling of cinnamon.  Stewed apple is also good, and in season fresh figs are lovely.
