Mrs Nickerson’s Banana Cake Recipe

In my bid to avoid the wastage of 3 rather manky bananas I decided to put them to good use in my tried and tested ‘Mrs Nickerson’s Banana Cake’ recipe.

The recipe came from my mother in law, she’s not Mrs Nickerson and actually she’s no great cook and so doesn’t really pass down recipes, but in the early days of our marriage she gave us a cook book sold in aid of the school she worked at with recipes put together by parents and staff. We never did find out who Mrs Nickerson was but she does make a mean banana cake.
