We've become a little samish in our cooking, and so partly in order to stimulate us into considering new recipes, I signed up for a Mindful Chef box this week.  We get a free choice of the 20+ recipes available each week.  So we sat at the computer on Thursday last week and chose three.  Two with fish, and one vegan.

The box arrived today.  The aim of the box is to reduce food waste by only giving you exactly the ingredients that you need for each particular recipe.  Their website says they are "on a mission to reduce plastic" in their deliveries - you could have fooled me.  Why did the 4 radish need their own little plastic bag?  and the mange tout peas?  And of course the little individual portion of rice in another plastic bag.  We have lots of rice in our pantry.  I think maybe there is a balance to be had between providing you with the ingredients you need, and perhaps asking if they really need to provide the rice and the soy sauce, for instance.  

The salmon fried with sesame seeds served on a bed of rice salad with mango was definitely tasty, a generous portion, and not complicated to cook - I would happily cook it again.  In fact, we have no sesame oil in our store cupboard, so we've added it to our shopping list for the next supermarket delivery.

I've emailed the firm expressing my concern about the plastic, and I don't think we will take many boxes, but if it stimulates us to expand our cooking a little, it will have served its main function.
