At Ruardean: Old fashioned fishcake Wednedsday...

At Lodge Farm we are back creating old fashioned fishcakes and a the luxurious fish pie. Its a slow process, each of the ingredients are hand prepared, whether its skinning the smoked haddock, or grating the lemon rind to stir through the fish cakes, mixing in handfuls of freshly shopped parsley. Louisa was reciting a verse in the kitchen, I can't remember the verse exactly but it was to do with making food with a good heart because that would then translate to whomever ate the food too...

That said, its an apt verse...yes preparation takes time, but every tiny part of the process is carefully considered with affection and pride. The outcome, real ingredientsthat you might have mixed up yourself to create wonderfully home made fish cakes...Refreshingly honest food....x
